Spanish Feast - Shrimp in Chocolate Sauce, Tortilla Espanola, and Stewed Eggplant

After the great paella fail, I decided I would try again to make a lovely Spanish meal for my family. This time, unlike the last, I did not disappoint! I mean, really, how can you go wrong with shrimp and stewed eggplants?!

The tortilla espanola was the daunting task. However, after getting over the idea of a tortilla being completely lacking of flour (and really nothing at all like the tortillas I know and love!), it wasn't too tricky to make. More like a frittata with potatoes than a "tortilla," it was simple and nice - a much needed change of pace in our otherwise carb-loaded house.

All in all, I felt like this dinner made up for my earlier flaws. We all need a "feel good" meal to restore faith in ourselves as cooks...and this, indeed, was it for me. I wish you the same success if you should venture into the land of chocolate sauce and potato-based tortillas!
