Chicken Vindaloo, Saag Paneer and Naan

A year or so ago, I met a lovely local cookbook writer, Shubhra Ramineni. She created the cookbook called "Entice with Spice," which is full of "easier" Indian recipes. This has been a great resource for many Indian meals in our house.

During the course of this month, we used it to make a favorite meal - chicken vindaloo, saag paneer and naan. Truly, as compared to many other Indian cookbooks, the recipes are a little more clear cut and simple to follow. The ingredients are not as "wild" and call for things more common to most kitchens. And the end result truly speaks for itself!

Of course, the only things about Indian cooking that that this cookbook doesn't improve upon is the clean-up! Check out our "before" and "after" images...

It should be noted that this pile was only half of what we used in terms of cookware.... Oh well! It's a small price to pay for a great meal!

I would suggest anyone interested in trying "easier" Indian recipes should check out this book!
