The Best Pizza Dough Recipe...Ever!

Pizza is one of those magical foods that everyone loves! Children. Hipsters. Soccer moms. Presidents. Everyone! Of course, that makes it a food on regular rotations in most households. And, why not?! It's quick. It's easy. It usually doesn't require silverware. In a word, it's perfect. A perfect food. However, how many folks (outside of the restaurant business) make it from scratch??

I do. And I do often. Do you know why?? Because I found the best recipe years ago, from some forgotten cookbook, and have guarded it with my life ever since. Not nearing as daunting as it seems, this pizza dough is really simple to make. The only complication is that, since it's not a Totino's from the freezer section, your hungry hoard will have to wait about an hour or so for the dough to rise...but, with enough planning, this shouldn't pose a real problem. After all, it will be a great lesson for the kids that the best things in life are worth the wait!

So, here it is:

Ingredients

-1 cup warm water

-2 tsp. dry yeast

- a pinch of sugar or honey

-2 1/2 to 3 cups of bread flour*

-2 Tbsp. olive oil

-1/2 tsp. salt

*in lieu of bread flour, you can use wheat flour or gluten free flour with the same results

Instructions

1. Pour warm water in a small bowl. Sprinkle yeast, sugar, and 1 Tbsp. of flour over the surface of the water. Stir until dissolved and let stand 15 minutes, until foamy.

2. Combine salt and 1 cup of flour in mixing bowl. Pour in yeast mixture and olive oil. Mix and add remaining flour 1/2 cup at a time. Knead until a ball is formed that is smooth and springy.

3. Place the dough in a greased bowl. Turn until covered. Cover the bowl with a damp cloth. Let rise at room temperature until tripled in bulk, about 1 1/2 hours.

4. Preheat oven to 500 degrees Fahrenheit.

5. Use a rolling pin on a floured surface to flatten dough. Be careful not to tear it.

6. Place dough onto pizza pan and brush with olive oil. Add sauce and desired toppings onto pizza. Bake for 8-10 minutes, until golden and bubbly. Cut and serve when done.
