Almond Cookies - The easiest cookie EVER!!

I love cookies! And I love baking. But, these days, I do very little of it due in large part to my son's need for destruction (and my need to constantly watch his every move!). However, the end of the month was coming and I still hadn't made my Chinese dessert!

Well, never fear! Almond cookies were here....or, at least, they would be within ten minutes of whipping out this recipe. Seriously. Ten minutes! Start to finish! They were the quickest cookie I have ever made...and quite possibly one of the best!

Ingredients

  • 1/2 cup butter, softened

  • 1/2 cup white sugar

  • 1 egg

  • 1 1/4 cups all-purpose flour

  • 1/2 cup ground almonds

  • 2 teaspoons amaretto liqueur Add class btn-disable before user checks ingredient

Directions

  • Preheat oven to 400 degrees F (200 degrees C).

  • In large bowl, cream together the butter and sugar. Beat in the egg, amaretto, and almonds. Gradually mix in the flour until well blended. Drop by teaspoonfuls 2 inches apart on ungreased cookie sheets.

  • Bake 5 to 8 minutes in the preheated oven, or until cookies are lightly colored.
