Beef and Pepper Stir Fry

Some nights I feel like queen of the world! I feel organized and together...like I have kicked life in the groin and uttered the mocking phrase - "I've got this!" However, those nights are rare; and, for the most part, I just feel worn out and tired, like I've been juggling plates all day.

Tonight was one such night. Nothing in particular ruined my mojo. There really wasn't any reason that I felt wrung out and "over it." But...I did. And so I was thankful that we chose to make this beef and pepper stir fry!

Let me tell you, it was a far cry from the Ramen noodles of my past. Easy, but requiring still a bit of work (slicing veggies, boiling noodles, cooking the beef), it was the kind of good, basic comfort meal that made me happy...made my family full...and made the day end on a positive note.

Three cheers to China for their wonderfully versatile and utterly fool-proof stir fry dishes! Without them, on days like these, moms like me would just nuke a Lean Cuisine...
